Benoît Diot, a winegrower from CRAMANT (Côte des Blancs) who owns 1,50ha of Grand Cru Chardonnay, has chosen to create an unconventional cuvée, carefully selecting the best of the best and thus producing a single micro-cuvée, with the remainder being sold as grapes or clear wine.
You are also invited to discover other more other non oak-aged champagnes produced by the family estate his wife runs: Champagne DIOT-LEGRAS.

Champagne Diot - Cuvée Subtil

Cuvée Subtil

Blend of different Chardonnay plots highlighting the rich expressiveness of the chalky soil of the Côte des Blancs ( Le Mesnil, Oger, Avize and naturally, Cramant).
Oak aging, aimed at enhancing the wine's complexity and harmony while preserving the typicity of this Grand Cru Champagne.
The nose is quite expressive, delicate, displaying aromas of white fruit accompanied by a touch of vanilla and beautiful “subtle” notes which leave room for a quite steady and structured mouth. The long and well balanced finish creates a very elegant and round wine.
A gourmet cuvée for connoisseurs!
Our gourmet suggestions include pan-fried foie gras, gratinated oysters, cheeses such as comté or matured gouda, or even a “croûte d'escargots” (snail pie) served with a leek fondue, the latter being Benoît's favourite recommendation.

  • Terroir : chalky soil from the Côte des Blancs
  • Grape varieties : 100% Grand Cru Chardonnay, including 25% old vines
  • Production : 500 to 1000 bottles, depending on the year
  • Barrels : 'feuillettes' : half-barrels containing 114 L. Gentle dosage of 8g/L
  • Vinification : "solera" vinification including 25% wine which hasn't undergone malolactic fermentation
  • Aging : Minimum 40 months
